WHY HE IS AMAZING: Dr. Ray is one of the most outstanding scholars in the field of food studies. He is the author of The Migrant’s Table: Meals and Memories in Bengali-American Households. He co-edited (with Tulasi Srinivas) Curried Cultures: Globalization, Food and South Asia. His most recent book The Ethnic Restaurateur examines the lived experience, work, memories, and aspirations of immigrants working in the food industry. He also explores his insightful and comprehensive theory as to why some ethnic cuisines command higher prices than others.
