WHY HE IS AMAZING: After working at Norman Van Aken award winning restaurant in Orlando, Digby’s passion and gastronomic identity brought him back to his home, St. Croix. Digby’s vision was to elevate St. Croix’s profile in the culinary world and create an awakening that highlights Crucian cuisine as a part of the American culinary story. He quickly achieved this through the fall 2016 opening of his restaurant, Balter. In its brief time being open Balter has been covered in The New York Times, Travel & Leisure and was named among USA Today’s Top Ten Restaurants in The Caribbean. Digby is the Culinary Ambassador of the US Virgin Islands (USVI) and the first chef from the USVI to stage at The James Beard House.
