WHY THEY ARE AMAZING: Paxx Caraballo Moll is the chef and co-owner of El Baoricua in San Juan, Puerto Rico, where they serve inventive bao buns filled with local ingredients and flavors. They’ve been working in kitchens since the early 2000s, spending time in the restaurants of José Enrique, Alfredo Ayala, and Roberto Treviño, and worked with chef Jason Vincent at the prestigious JE Invites events. Their work has been covered widely, in outlets such as the New York Times, Munchies, and the Village Voice. Hurricane Maria forced the closure of El Baoricua, but Paxx is now running the kitchen at JungleBird, the tropical sister bar of La Factoría. Paxx is a member of Food & Wine Magazine’s 2019 Class of Best New Chefs.
