Born and raised in São Paulo, Brazil, Renata Ameni began her pastry career at Patisserie Douce France before moving to the U.S. During her tenure as Executive Pastry Sous Chef at Eleven Madison Park, the restaurant received three Michelin stars and the top spot on the World’s 50 Best Restaurants list. Renata also led the pastry team at David Kinch’s Manresa in California and developed the pastry program at 70 Pine Street in New York alongside Chef Jamal James Kent. In 2025, she opened Birdee—a bakery and all-day café on the Williamsburg waterfront—where her acclaimed viennoiserie and baked goods take center stage.
